Is there anything better than a fresh juicy peach in the summer?! I’ve seriously been counting down the days until I could make this Peach Caprese Salad y’all! When I saw peaches in the grocery store last week, I knew this had to be my next recipe on the blog. 🙂

As you may know, a traditional Caprese salad is made with tomatoes. While it is equally as good, I love this fresh twist with peaches in the summer! The sweetness of the peaches and honey contrasted with the balsamic vinegar, coarse salt, pepper, and mozzarella is absolute PERFECTION!

I also love that this can be thrown together in 10 minutes or less! Not to mention, the colors in this dish are BEAUTIFUL making it an absolute showstopper. Bon Appetit y’all!

Peach Caprese Salad

YIELDS 6-8 SERVINGS
PREP TIME: 10 MINUTES

Ingredients

6 yellow peaches

1 pound fresh mozzarella

10 to 15 basil leaves

2 tablespoons good balsamic vinegar

3 tablespoons honey

Coarse kosher salt

Freshly ground black pepper

Instructions

  • Slice the peaches and mozzarella. Arrange casually on a large platter, tucking the fresh basil leaves in between the peaches and mozzarella.
  • Drizzle with balsamic vinegar and honey.
  • Sprinkle with salt and pepper and serve at room temperature.

Notes

Make sure to use ripe peaches that have been stored at room temperature (not in the refrigerator).
