Thinking about our baby girl’s nursery has definitely lifted my spirits during COVID-19. I am so so thankful to have an exciting project to work on and look forward too! I’ve found lots of inspiration on Pinterest & have put together my own inspiration board. One of my favorite interior design tips is to mix old with new! Since all of the furniture will be brand new, I’m going to add in some antique botanical prints, an Italian tole chandelier that I bought years ago, and blanc de chine lamp.

There is just something about having a fresh loaf of breakfast bread that is such a luxury to me. Maybe because I can literally roll out of bread and immediately have something super delicious and made from scratch without having to do any work. 😉
Over the past few weeks, most of us have been looking for some type of comfort. I’m not sure about you, but I personally seek comfort when I cannot control some of the circumstances around me. With all of this time at home, I’ve found myself really honing in on the little things in life that bring me joy, peace, and comfort. I’ve been spending a lot of my time reading, working out in the yard, walking, experimenting with new recipes, listening to music, getting lost in cookbooks, scheming about ideas for the baby’s nursery, and last but not least making comfort food. I’m pleased to introduce you to one of my absolute favorite comfort foods or shall I say appetizer! 😉
Over the past two weeks, while being isolated at home, I’ve been trying to find pleasure in simple things. We live on a wonderful street that is full of cute kiddos who are always playing outside. I’ve really taken note of their creativity when it comes to entertaining themselves with the simplest of things. I myself have tried to return to the little things in life that bring me joy, especially during this stressful time when we feel out of control. A few of these things include baking, getting lost in a cookbook without any distractions (aka my phone), listening to relaxing music, reading, flipping through some of my favorite interior design books, organizing my closet for spring, dreaming up designs for the nursery on Pinterest… the list goes on & on.
In my opinion, there’s nothing like a sweet and tangy key lime pie in the spring! Want to know what’s even better?! Key Lime Pie BARS!!! Key lime pie is typically made with a graham cracker crust, but I decided to go with a buttery shortbread crust and it’s a total game changer!! These bars are the perfect combination of salty & sweet. The secret to the delicious creamy filling is Eagle Brand Sweetened Condensed Milk — and I cannot even begin to describe how easy it is to make! 🤗
So I came up with this recipe a few weeks ago when I was wanting something HEALTHY & SWEET! Little did I know that my husband would eat half the batch in one night lol. 😉 After that, I knew that I had to share these “Cookie Dough” Energy Bites with y’all! Just FYI, these energy bites aren’t actually cookie dough (no butter & no eggs), but they tasted JUST LIKE it after they are refrigerated for 2-4 hours. And let’s get real… who doesn’t love cookie dough? 🍪❤️
