Happy New Year’s Eve y’all! I hope everyone had a very Merry Christmas! So many of y’all posted stories on Instagram or sent me pics of recipes you made and I cannot begin to tell y’all how much that means to me! It’s SUPER rewarding & fun to see a recipe become a hit because a lot of work goes into each and every one of them. Blueberry French Toast, Flourless Chocolate Cookies, and Peppermint Dark Chocolate Oreos seemed to be the top 3 recipes over the holidays!
And I have a feeling this Ginger Champagne Cocktail is going to be a hit as well just in time for New Year’s! I cannot believe we are one day away from 2020! 🎉
I’m bringing all the goods to make this cocktail to a party we are going to tonight because it’s literally THREE INGREDIENTS! Champagne, ginger ale, and candied ginger! Think of a mimosa, just substituted with ginger ale instead of orange juice. The candied ginger makes this little drink SUPER FESTIVE, and the best thing is the champagne will cause it to fizz. 🍾
**I will note that candied ginger isn’t the easiest thing to find in grocery stores. The best places I’ve been able to find it are Trader Joe’s, Homegoods, and TJMaxx in the gourmet food section. Surprising right?!
Okay, now back to 2020! Over the past few years, I’ve gotten into the habit of really taking a day or two to reflect upon the previous year and I have to say it’s made a BIG difference in how I approach the upcoming year. Not only is it a great way to hold yourself accountable in areas you know you can improve, but it’s equally important to recognize and write down your accomplishments and experiences as well! To be completely honest, this is something I tend to struggle with. I’m always looking for ways I can improve or focusing on where I am lacking. Sometimes this can be a good thing, but most of the time it’s not. One of my goals for 2020 is to not be so hard on myself and to show myself a little more grace.
I cannot wait to see what this next year holds, especially for Petite Southern Kitchen! I’m SO incredibly grateful for 2019 — I know it will be a year that I look back on for years to come. I’m beyond thankful for this opportunity to do what I absolutely LOVE & for all of your sweet support! If you asked me a year ago where this little food blog would be going into 2020, I never would have guessed. 2019 will also be a year that makes me fill proud — mainly because I know my dad would be super proud of me for pursuing my dreams. If I’m being super transparent, it required a lot of hard work & BRAVERY to do things I had never done before, and I would have never made it without the Lord’s provision and strength. Happy New Year y’all!

Ginger Champagne Cocktail
YIELDS 4-6 SERVINGS
PREP TIME: 5 MINUTES
1 bottle of Champagne or Prosecco
8-12 ounces ginger ale
Crystalized ginger, 4-6 whole pieces
- Chill the champagne and ginger ale for at least 4 hours before serving, preferably overnight.
- Fill champagne flutes ¾ of the way full with champagne.
- Top with 1-2 ounces of ginger ale.
- Place a piece of candied ginger in each glass. Serve immediately.
If you are serving a big crowd you can most certainly fill a punch bowl with the champagne and ginger ale. Just place the candied ginger in a bowl next to the glasses.
