Easy Buttercream Sugar Cookies

Have you ever wanted to make beautiful & delicious sugar cookies on a regular basis – not only for a special celebration or around the holidays?! Look no further y’all! These cookies are so dang easy & good.

I’ve discovered the absolute perfect shortcut. Betty Crocker sugar cookie mix with just one stick of butter + one egg (just make sure these are both room temp). Using this cookie mix saves you time by not have to measure out the dry ingredients. How easy is that?!

The key to making these extra special is the buttercream frosting AND pretty sprinkles of course! Nothing is better than homemade buttercream – it’s whipped to the perfect consistency, sweet, and the pastel color is spot on for spring.

Get ready for these to become a staple in your recipe repertoire. They are a crowd pleaser every single time!

Easy Buttercream Sugar Cookies

Yields 12 servings
Prep time: 20 minutes
Cook time: 8 minutes

INGREDIENTS
Cookies
1 (17.5 ounce) bag Betty Crocker sugar cookie mix
8 tablespoons unsalted butter, room temperature
1 large egg, room temperature

Buttercream
2 sticks unsalted butter, room temperature
3 tablespoons whole milk
Pinch of coarse kosher salt
3 ½ cups powdered sugar
½ teaspoon pure vanilla extract
Gel food coloring
Sprinkles


NOTES
The sugar cookies will look a little underdone when you take them out of the oven – this is what makes them soft & delicious! They will continue to cook & set while they cool.

Store in an airtight container for up to 3-5 days.

INSTRUCTIONS
Cookies
Preheat the oven to 350 degrees.

Use a large cookie down scoop to transfer the dough onto the baking sheet lined with parchment paper.

Use two fingers to gently flatten each cookie before baking. (The cookies will not cook thoroughly if you skip this step).

Bake for exactly 9-10 minutes. Cookies will look a little underdone.

Let cool on the baking sheet for 10 minutes and then transfer to a wire rack to finish cooling completely.

Buttercream
In an electric mixture using the paddle attachment, beat the butter and salt until light and fluffy.

Reduce the mixer to low and slowly add powdered sugar.

Add vanilla and whole milk. The icing should be dense and creamy.

Apply the icing using an offset spatula.

Immediately dust with sprinkles while the icing is still soft.
