Asparagus Goat Cheese Prosciutto Rolls

I couldn’t think of a better appetizer just in time for Easter this weekend! Not to mention you only need THREE INGREDIENTS y’all! You just cannot beat that. 

These asparagus rolls are so bright and fresh – all while BURSTING with flavor. Also side note — can we talk about how pretty this appetizer is?! The colors are a beautiful combo and something about asparagus just screams spring to me.

I love how easy & impressive this recipe is. There are always two things I look for in recipes around any holiday…

  1. They need to be easy & approachable – while also being a crowd pleaser of course. ;)

  2. I need to be able to make them ahead of time.

Asparagus Goat Cheese Prosciutto Rolls

Yields 6 servings
Prep time: 20 minutes
Cook time: 1-3 minutes

INGREDIENTS
10-14 spears fresh asparagus
4 ounces goat cheese, softened
4 ounces prosciutto

Store in an airtight container for up to 1-3 days.

INSTRUCTIONS
Bring a large pot of water to a boil.

Meanwhile, cut about 1” off the bottom of the asparagus stalks.

Fill a large bowl with ice & water and set it near the stove.

Once the water is boiling, carefully add the asparagus and cook for 1-3 minutes depending on the thickness of the stalks.

Remove the stalks with a slotted spoon and plunge them immediately in the bowl of ice water. This step is essential to stop the cooking process & keeps them a bright vibrant green!

Let the asparagus sit in the ice water for about 1 minute. Remove them with a slotted spoon and place onto paper towels.

Place a piece of parchment paper on top of a cutting board. Lay out the prosciutto and cut each piece in half.

Add small slices of the goat cheese to each piece of prosciutto and spread out evenly using a knife or offset spatula.

Place a stalk of asparagus on top of the goat cheese & prosciutto. Carefully roll it around the stalk. Repeat with remaining asparagus.

Serve immediately or chill in the refrigerator until 30 minutes before serving.
