Watermelon Blueberry Feta Salad

I cannot believe this, but the 4th of July is just a few weeks away! I wanted to share this amazing Watermelon Blueberry Feta Salad with y'all just in time for the summer holiday. Not only is it SO refreshing and delicious, but it's also SUPER patriotic color wise. :)

My mom made this salad a few years ago and I've been making it every summer since then! This is not your typical fruit salad, in fact, I would relate it to a Caprese salad in terms of concept and flavor! The olive oil, balsamic vinegar, and feta paired with the watermelon, blueberries, and freshly chopped mint makes the perfect combination. The mint literally brings this salad to LIFE and ties everything together!

I also love that I can literally throw this recipe together in under 10 minutes, and the flavor is out of this world! Since the main ingredient is watermelon, I wouldn't recommend making this ahead of time. I find that the longer the salad sits the more watered down it gets. I would suggest whisking together the olive oil, balsamic vinegar, salt, and pepper ahead of time and storing the refrigerator. Then right before your guests arrive just toss everything together. SO simple!

Watermelon Blueberry Feta Salad

Yields 8 servings
Prep time: 10 minutes

INGREDIENTS
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon coarse kosher salt
1/2 teaspoon ground black pepper
8 cups diced watermelon, seeds removed
2 cups fresh blueberries
1/4 cup rough chopped fresh mint leaves
1/2 cup crumbled feta cheese

NOTES
I wouldn’t recommend making this salad ahead of time, because the longer it sits the more watered down it gets.

After, the salad is tossed I like to garnish with additional mint and crumbled feta.

INSTRUCTIONS
In a large bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Add the watermelon, blueberries, fresh mint, and crumbled feta cheese.

Gently toss to coat.
