"Cookie Dough" Energy Bites

So I came up with this recipe a few weeks ago when I was wanting something HEALTHY & SWEET! Little did I know that my husband would eat half the batch in one night lol. ;) After that, I knew that I had to share these “Cookie Dough” Energy Bites with y’all! Just FYI, these energy bites aren’t actually cookie dough (no butter & no eggs), but they tasted JUST LIKE it after they are refrigerated for 2-4 hours. And let’s get real… who doesn’t love cookie dough? 🍪❤️

In my opinion, there are two key ingredients that really make these energy bites taste like cookie dough.

  • Almond butter-- the main reason I chose almond butter is because my husband is allergic to peanuts. But also because almonds are a little bit sweeter than peanut butter. 🤗 I use the almond butter from Sam’s -- it tends to be a bit runnier than other almond butter brands I’ve tried. This is GREAT because it really makes everything STICK together which is key! 

  • Mini chocolate chips -- it’s all about the texture and mini chocolate chips are absolutely perfect for these little energy bites! 

Just a warning… these “Cookie Dough” Energy Bites are HIGHLY addicting lol! They are perfect for so many things -- midday snack, kiddos lunches, dessert, or a midnight-snack! Enjoy y’all!

"Cookie Dough" Energy Bites

Yields 16 servings
Prep time: 10-15 minutes
Chill time: 2-4 hours

INGREDIENTS
½ cup almond butter
¼ cup honey
½ teaspoon vanilla
1 cup old fashioned oats
2 pinches of coarse kosher salt
⅓ cup sweetened coconut flakes
⅓ cup mini chocolate chips

NOTES
Store in an air-tight container in the refrigerator for up to 5-7 days.

INSTRUCTIONS
Line a large cookie sheet with wax or parchment paper.

In a large bowl, combine the almond butter, honey, and vanilla. Mix until fully combined.

Fold in the old fashioned oats and salt using a spatula.

Add the coconut flakes & mini chocolate chips and fold until combined.

Use a small cookie dough scoop to form the dough into small balls. Roll each ball using the palms of your hands and place on the cookie sheet lined with wax paper.

Refrigerate the energy bites for at least 2-4 hours before serving.
