Baked Brie with Fig Preserves

Over the past few weeks, most of us have been looking for some type of comfort. I’m not sure about you, but I personally seek comfort when I cannot control some of the circumstances around me. With all of this time at home, I’ve found myself really honing in on the little things in life that bring me joy, peace, and comfort. I’ve been spending a lot of my time reading, working out in the yard, walking, experimenting with new recipes, listening to music, getting lost in cookbooks, scheming about ideas for the baby's nursery, and last but not least making comfort food. I’m pleased to introduce you to one of my absolute favorite comfort foods or shall I say appetizer! ;)

It doesn’t get any easier than Baked Brie with Fig Preserves y’all! I cannot begin to count how many times I’ve made it over the years. I love nothing more than a super simple recipe that is packed full of flavor!

I've also been playing around with different types of food photography. You might notice that these photos are a little bit darker and have stronger shadows than what I typically shoot. Instead of shooting this recipe in my sunroom, I decided to simply take pictures of it on our kitchen counter next to a window. I really love the way they turned out and love how one window really highlights the bubbling brie.

I'm being drawn more to this style because it's 100% natural. This is where I put dishes together before or after they come out of the oven. It didn't require me pulling out props or anything "extra" -- which makes my job easier. I know that having a baby in the near future is definitely going to change things around our house, and I'm trying to think of ways that I can seamlessly continue blogging while being a new mom.

One of my favorite times of day is around 5:30 PM when Jaxon usually gets home from work and we just sit in our living room to catch up on our day and munch on an appetizer -- AKA happy hour. (Really wishing I could have a glass of wine right about now lol.) Please do me two favors -- make this baked brie ASAP and have enjoy a glass of red wine for me since I cannot currently partake. Baked Brie with Fig Preserves

Yields 4 servings
Prep time: 5 minutes
Cook time: 10-20 minutes

INGREDIENTS
8 ounce wheel of brie
3-4 tablespoons fig preserves
½ teaspoon lemon zest
Water crackers, for serving

INSTRUCTIONS
Preheat the oven to 350 degrees.

Carefully slice off the top of the rind on the brie with a serrated knife. Leave the rind on the edges & bottom.

Place the brie in an oven safe baking dish and bake for 10-20 minutes until the cheese is melted.

While the brie is baking, mix together the fig preserves and lemon zest in a small bowl.

Using a spoon, top the baked brie with the fig preserve mixture.

Serve with water crackers.
