Apple Butter Brie Crostini

Meet your new favorite go-to fall appetizer y'all!! It takes less than 20 minutes to prepare AND bake! How great is that?! The amount of flavor that is packed into these little crostinis is INSANE when you realize how few ingredients are required!

I also LOVE it when an appetizer's or any recipe's beauty is found in the messiness / imperfection! Why is that?! Well, personally I think it comes from the fact that we live in a world today where pre-packaged & processed foods are the norm AND we are also constantly consuming "picture perfect" images on social images ALL. THE. TIME. It’s a breath of fresh air when someone decides to put down their phone and actually CREATE something with their hands! Your guests will appreciate the fact that this appetizer is made from scratch and feel relaxed when they see the beautiful messiness. Such a paradox right?!

I'm going kind of deep, but this has really been on my heart lately -- not just for food but in LIFE. I just read an amazingggg book by Rebekah Lyons called Rhythms of Renewal. This post is in no way sponsored but it was SO great and had such an impact on me that I really wanted to share it with y'all! Personally, I struggle with anxiety and have also really struggled with constantly feeling behind over the past year. This book, along with God's word, and Rebekah's four rhythms of renewal have brought a lot of PEACE to my life over the past few weeks. So for whatever reason, I really felt compelled to share this with y'all! Even if it just helps one person then its totally worth it!

Apple Butter Brie Crostini

Yields 9-12 servings
(2-3) pieces per person
Prep time: 10 minutes
Cook time: 6-8 minutes

INGREDIENTS
24 (½-inch-thick) diagonal French baguette slices
1 jar apple butter
14-16 ounces brie, cut into 1-inch pieces
2 Granny smith apples, thinly sliced
1/4 cup chopped walnuts
2-3 tablespoons honey

NOTES
People always ask if you can leave the rind on the brie. YES — I always do when I’m baking brie because you can barely tell its there and it doesn’t have a taste. I also think that it helps the cheese not to spill over the crostini.

INSTRUCTIONS
Preheat oven to 375 degrees.

To assemble the crostini, place all of the slices on 2 sheet pans lined with parchment paper.

Spread about 1-2 teaspoons of apple butter onto each slice.

Place one piece of brie on top of the apple butter.

Bake for 6-8 minutes until the cheese is melted.

Transfer the crostini onto a platter or cheese board, and top each crostini with a thin apple slice.

Sprinkle with chopped walnuts, and drizzle with honey.

Serve immediately!
